In this bar from the Italian Life Style collection, we wanted to highlight some typical ingredients of the Italian gastronomic tradition. A “string” of 4 gems that recalls the preciousness of these fruits of the earth that are the story of the places and the people who produce them. A symbol of the passion for “good food” and the “better living” typical of Italic DNA. In the Pietra di Luna bar the significant ingredient is one of the most precious in history: salt. So important that in the past it constituted the payment of the workers from which the word “salary” derives. Italy boasts excellences, such as that of Cervia, recognized in the world for its peculiar organoleptic properties.

The Moonstone

The Moonstone – Selenite or Adularia – owes its name to its resemblance to the Moon. In Greek mythology “Selene” was the goddess of the moon and in Hindi is called “chandrakant” that is “preferred by the moon”. Adularia is a variety found in the European Alps and adularescence is the optical phenomenon characteristic of this stone with splendid pearly reflections. In India it was believed that possessing it brought a beneficial divine influence, in the West that its internal light was that of a divinity, in ancient Rome that could make the image of the divine Diana appear. Traditionally linked to the woman, this stone is a good omen and helps meditation.

Ingredients

70% min. cacao. Organic cacao beans (Tanzania, Ecuador), organic cane sugar, organic cacao butter, organic cacao nibs; Emulsifier: organic sunflower lecithin; Cervia sweet salt. May contain traces of milk and nuts.

Notes

Deliciously crispy thanks to the cacao nibs and the Cervia sweet salt. Creamy, with notes of tropical fruits, flowers, hints of citrus and a final with spices.

Ecuador is the land where the Theobroma Cacao plant was domesticated, and where people have been growing and consuming cacao for almost 5,000 years. Ecuadorian cacao is of Nacional genetics, recognised worldwide as one of the best raw materials due to its rich organoleptic properties.

The Trinitario cacao of Tanzania, the East African country known for its natural beauty such as Kilimanjaro, grows in Mbingu (Paradise in Kiswahili) in the Kilombero Valley, on the edge of the beautiful Udzungwa Mountain National Park. A rural area where Kokoa Kamili works with small local farmers.

Cervia sweet salt is unique in the world and is still harvested using the traditional method. Its organoleptic characteristics make it ‘sweet’ because it lacks bitter chlorides. This salt is “integral” sea salt: its origin is sea water which is evaporated and concentrated until the actual salt is produced. Integral because it is only washed with mother water (water with a much higher salinity concentration than that of the sea and lower than that of salt) which is rich in trace elements and substances that are naturally beneficial to the body. Its typical colour is not very white, on the contrary it has all the shades of pink and grey that derive from the production process.
