In our Caramello Veg we wanted to create a delicious vegan specialty starting from the recipe of our Caramello, a tribute to Cooked Milk. An ancient Italian preparation, born in the countryside, which, thanks to its goodness, quickly conquered the tables of the lords for festive occasions. This surprising version, in which the milk is replaced by almond, will arouse emotions both in those who follow a particular diet and in those who discover a completely new and appealing taste.

48% min. Cacao. Organic natural cacao butter (Ecuador), organic peeled almond, organic cane sugar, organic coconut blossom sugar, Cervia sweet salt, organic Bourbon Vanilla from Madagascar, fleur de sel from Bali. May contain traces of milk and other nuts.

A delicious pairing of toasted and caramelized Almonds from Toritto that merges with the extraordinary Cervia sweet salt, and results in a surprising explosion of tastes.

Ecuador is the land where the Theobroma Cacao plant was domesticated, and where people have been growing and consuming cacao for almost 5,000 years. Ecuadorian cacao is of Nacional genetics, recognised worldwide as one of the best raw materials due to its rich organoleptic properties.

Cervia sweet salt is unique in the world and is still harvested using the traditional method. Its organoleptic characteristics make it ‘sweet’ because it lacks bitter chlorides. This salt is “integral” sea salt: its origin is sea water which is evaporated and concentrated until the actual salt is produced. Integral because it is only washed with mother water (water with a much higher salinity concentration than that of the sea and lower than that of salt) which is rich in trace elements and substances that are naturally beneficial to the body. Its typical colour is not very white, on the contrary it has all the shades of pink and grey that derive from the production process.

The almond tree has been present in Mediterranean countries since ancient times. It arrived in Italy thanks to the Phoenicians and almonds were mainly used for the preparation of sweets and for the oil which, from the Middle Ages onwards, was sometimes used instead of the more expensive olive oil. In traditional medieval and Renaissance iconography, the almond often surrounds Christ or the Virgin Mary to signify that the divine nature is contained within the human one. The Toritto almond, cultivar ‘Filippo Cea’, is closely linked to the territory and contributes to its biodiversity. It is cultivated using organic farming methods in the Alta Murgia National Park. In 2004 the Toritto Almond became part of the Ark of Taste, obtaining recognition as a Slow Food Presidium; in the same year the Puglia region identified it as a ‘typical and traditional product’.
