The name Biancomangiare is due to the white color of its main ingredient: ground Almonds. This antique recipe, which has probably Arab origins, has become typical for some of the Italian Regions and appears several times in history. Pellegrino Artusi cites it in his volume “La scienza in cucina e l’arte di mangiar bene” (Science in Kitchen and the Art of Eating Well). Matilde di Canossa decided to serve a Biancomangiare, at her famous banquet in 1077, organized to bring back peace between Pope George VII and the Emperor Henry IV, and it was served at the rich wedding banquet of Maria de’ Medici and Henry IV of France. Our chocolate bar wants to give a tribute to this specialty. Re-creating this antique recipe for our Biancomangiare we use only the best Almonds from Toritto, cultivar “Filippo Cea”, paired with Single Origin Cocoa Butter from Ecuador. Realizing, together with the other precious ingredients, an exquisite specialty that delights with its innovative flavor.

The almond tree has been present in Mediterranean countries since ancient times. It arrived in Italy thanks to the Phoenicians and almonds were mainly used for the preparation of sweets and for the oil which, from the Middle Ages onwards, was sometimes used instead of the more expensive olive oil. In traditional medieval and Renaissance iconography, the almond often surrounds Christ or the Virgin Mary to signify that the divine nature is contained within the human one. The Toritto almond, cultivar ‘Filippo Cea’, is closely linked to the territory and contributes to its biodiversity. It is cultivated using organic farming methods in the Alta Murgia National Park. In 2004 the Toritto Almond became part of the Ark of Taste, obtaining recognition as a Slow Food Presidium; in the same year the Puglia region identified it as a ‘typical and traditional product’.

Ecuador is the land where the Theobroma Cacao plant was domesticated, and where people have been growing and consuming cacao for almost 5,000 years. Ecuadorian cacao is of Nacional genetics, recognised worldwide as one of the best raw materials due to its rich organoleptic properties.

Citrus fruits (lemons, oranges, etc.) are also called ‘Hesperid berry‘ after the myth of the Hesperides: the maidens guardians of the marvellous garden that contained the magical golden apples symbolising fruitful love. Lemon is renowned for its calming, anti-inflammatory properties and is said to improve memory.
