This chocolate bar is dedicated to my daughter Gaia. In the name are enclosed my best wishes for her, and all the young women building their own future. A future that has already arrived, and I am sure they will be able to improve it, as they know how important their choices are. They are the artisans of their destiny. The real princesses are not waiting in a tower, but they are leaving their castles every day, and are deciding who they want to be.

Notes

In this bar, cacao from Ecuador and India are skilfully blended. A marriage between the original country, where Theobroma Cacao was domesticated, and a modern producer of this crop. Past and future intertwine to provide an unexpected sensory experience.

The raspberry was already cultivated by the Greeks and Romans and was given its scientific name Rubus Idaeus, or ‘bramble of Mount Ida’, after the Greek mountain where raspberries grew in particular abundance. They have been used since ancient times for their relaxing effect on the nervous system.

Damask Rose oil is one of the most expensive essential oils in the world, not because of market considerations, but because it takes hundreds of tons of rose petals to extract just a few drops. The flowers are renowned for their fragrance and edibility, for example as the main ingredient in one of the oldest Ayurvedic preparations, Gulkand. Among its properties it is said to have analgesic properties and to promote good sleep by exerting an anti-stress action.

The Roship is also known as the ‘dog rose’ because of the roots were used in ancient times to treat rabies. In the language of flowers, the Roship symbolises both poetry and independence. Today, it is considered a Super Food thanks to its small fruits (berries), which are the most concentrated ‘natural source’ of Vitamin C and therefore help to strengthen the body’s natural defences.
